Sharp, stuffed peppers fly across your plate like projectiles: tension in taste and shape.

A sharp, elongated starter: grilled green peppers filled with lime sour cream, lying diagonally on a dark sauce streak as a flying object. The silhouette refers to the suspected projectile from the news, the flavors are tense and contrasting.

Ingredients

  • 8 large green peppers (mild or hot to taste)
  • 200 g sour cream
  • 1 lime (juice and zest)
  • 1 clove garlic
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tsp smoked paprika powder
  • 1 tbsp red wine vinegar
  • Salt and pepper
  • 4 tbsp black bean sauce (or homemade from black beans, see tips)

Method

  1. Preheat the oven to 200°C (grill setting).
  2. Slice the peppers lengthwise, remove seeds, but keep the stem for the 'projectile effect'.
  3. Mix the sour cream with lime juice, zest, finely chopped garlic, salt and pepper.
  4. Slice the red onion into thin half rings and mix with vinegar and a pinch of salt, let sit.
  5. Brush the peppers with olive oil, sprinkle with paprika, and grill 8-10 minutes until just soft and lightly charred.
  6. Let cool briefly, fill each pepper half generously with the sour cream mixture.
  7. Spread a streak of black bean sauce diagonally on each plate (the 'flight path').
  8. Place two filled peppers per plate, diagonally on the sauce, stems pointing in the same direction like flying projectiles.
  9. Garnish with pickled onion and extra lime zest if desired.

Serving notes

  • Serve on a rectangular plate or slate for extra 'flight path' effect.
  • Drizzle extra lime over the peppers just before serving.
