Permanent Parfait Greenland Base

A solemn dessert shaped like a military base, with clear, sober layers and a strategic touch.

A precisely layered parfait with white chocolate and mint on a dark base, shaped as a minimalist military base: a rectangular 'bunker' with a slanted green strip as 'radar', referencing the US expansion in Greenland.

Ingredients

  • 200 g dark chocolate
  • 150 g bastogne biscuits (or spiced cookies)
  • 60 g unsalted butter
  • 250 ml heavy cream
  • 100 g white chocolate
  • 2 eggs
  • 60 g sugar
  • 1 tsp vanilla extract
  • 4 sprigs fresh mint
  • 4 long green candy strips (e.g., sour belts, for the 'radar')

Method

  1. Line a 20x10 cm loaf tin with baking paper.
  2. Melt the butter and crumble the cookies. Mix and press firmly into the tin as a base. Chill.
  3. Whisk eggs and sugar over a bain-marie until creamy.
  4. Melt the white chocolate and fold into the egg mixture. Let cool slightly.
  5. Whip the cream with vanilla extract until stiff and fold into the mixture.
  6. Pour half the parfait mixture over the cookie base. Melt the dark chocolate and swirl through. Add the rest of the parfait mixture.
  7. Freeze for at least 4 hours.
  8. Cut into four rectangular blocks ('bunkers'). Place a green candy strip diagonally on each as 'radar'. Garnish with a mint leaf.
  9. Serve on a white plate, keeping lines sharp.

Serving notes

  • Arrange the blocks in a straight line for a base effect.
  • Serve without extra garnish for a solemn look.
