Phoenix Orb Salad

Based on:

TypeSalad

Serves4 people

DateOctober 7, 2026

A spherical salad as a new planet, with nebula-like grilled veggies and seeds as cosmic dust.

A round salad built like a planet, with a central white mozzarella orb on a dark lentil base. Grilled vegetables swirl around as nebula, and glossy seeds glint as 'heavy metals.' The silhouette evokes a gas giant with nebula streams, echoing the recycled planet from the news.

Ingredients

  • 200 g black lentils (beluga)
  • 2 balls buffalo mozzarella
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 courgette
  • 1 aubergine
  • 100 g cherry tomatoes
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
  • 1 red onion
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • salt and pepper

Method

  1. Cook the lentils according to package instructions, drain and let cool.
  2. Cut peppers, courgette, aubergine, and onion into wide strips. Brush with 2 tbsp olive oil and grill on high heat until charred.
  3. Halve the cherry tomatoes.
  4. Mix the lentils with 2 tbsp olive oil, red wine vinegar, oregano, salt, and pepper. Spread in a wide circle in the center of a large platter.
  5. Place the mozzarella balls in the middle of the lentils, touching, as the central planet.
  6. Arrange the grilled vegetables as nebula-like streams around the mozzarella, partly over the lentils, partly fanning outward.
  7. Scatter cherry tomatoes and seeds around the edge as stardust and heavy metals.
  8. Season everything with extra pepper and a little salt if needed.

Serving notes

  • Serve on a large round plate or platter so the planet silhouette remains visible.
  • Keep the mozzarella balls whole for best effect.
