Pie Attack Salad

Mozzarella pies with a spicy core, carelessly tossed on salad: scandal served on a plate.

A neatly plated salad with round, creamy mozzarella 'pies' tossed onto a bed of mixed greens. The mozzarella is partially filled with a sharp, spicy radish-horseradish cream, echoing the scandalous tone and the surprise at the core.

Ingredients

  • 2 balls buffalo mozzarella (250 g total)
  • 100 g radishes
  • 1 tbsp horseradish paste
  • 2 tbsp crème fraîche
  • 1 bag mixed salad greens (approx. 100 g)
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp wholegrain mustard
  • pepper and salt

Method

  1. Wash the radishes and slice half thinly, grate the rest.
  2. Mix the grated radish with horseradish paste and crème fraîche to make a spicy cream.
  3. Slice the mozzarella into 8 thick rounds. Make a small incision in each and fill with the radish-horseradish mixture.
  4. Mix olive oil, vinegar, mustard, pepper, and salt into a dressing.
  5. Cut the red onion into thin rings.
  6. Spread the mixed greens over a large flat platter. Arrange the onion rings and radish slices on top.
  7. 'Throw' the filled mozzarella rounds as pies onto the salad, so they look freshly landed.
  8. Drizzle with the dressing.

Serving notes

  • Serve on a flat platter so the 'pie strikes' are clearly visible.
  • Provide extra napkins for the 'scandal effect'.
  • Serve chilled for maximum freshness.
