Pipeline 7 Parfait

Ingredients

  • 500 ml whipping cream
  • 4 egg yolks
  • 100 g sugar
  • 100 g dark chocolate
  • 1 tbsp cocoa powder
  • 8 long chocolate biscuits (e.g. cigarillos)
  • 100 g Bastogne biscuits
  • 25 g butter
  • 50 ml coffee liqueur (optional)
  • 1 tbsp honey

Method

  1. Whip the cream until stiff and chill.
  2. Beat the egg yolks with sugar until light and creamy.
  3. Melt the dark chocolate in a bain-marie and stir in the cocoa powder.
  4. Mix the melted chocolate into the egg yolk mixture.
  5. Carefully fold in the whipped cream.
  6. Line a loaf tin with plastic wrap and pour in the parfait mixture. Freeze for at least 4 hours.
  7. Crumble the Bastogne biscuits and mix with melted butter and honey for a rough crumble.
  8. Let the parfait thaw briefly, then cut into long rectangular pieces.
  9. Draw a thick line of chocolate sauce or coffee liqueur across the plate.
  10. Place a strip of crumble across the plate as 'desert'.
  11. Lay the parfait pieces in a straight line over the sauce, forming a pipeline.
  12. Place the chocolate biscuits at each end as extra pipeline sections.

Serving notes

  • Serve aligned and neat, without extra decoration.
  • Keep the crumble only beneath the 'pipeline', not over it.
