Pipeline Deluxe

A golden potato pipeline as a playful nod to the Venezuelan oil takeover.

Golden, crispy potato sticks form an impressive oil pipeline across the plate, with glossy aioli dip as the 'oil well'. A visible nod to the billions of oil barrels in the news, served as a side dish radiating victory and control.

Ingredients

  • 4 large waxy potatoes
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 lemon
  • 4 tbsp mayonnaise
  • 1 clove garlic
  • 1 tbsp fresh parsley, chopped

Method

  1. Preheat the oven to 220°C (430°F).
  2. Peel the potatoes and cut them into long, thick sticks (about 1.5 cm wide and as long as possible).
  3. Toss the potato sticks with olive oil, paprika, and sea salt.
  4. Arrange the sticks on a baking sheet lined with parchment paper, in rows to form one long 'pipeline'. Bake 30-35 minutes until golden and crisp, turning halfway.
  5. Meanwhile, mix mayonnaise with pressed garlic and a little lemon juice for aioli.
  6. Arrange the potato sticks on a long platter like a pipeline, with a bowl of aioli at the end as the 'oil well'. Sprinkle with parsley.

Serving notes

  • Serve the 'pipeline' on a dark platter for contrast.
  • Place the aioli at the end as a symbolic oil source.
  • Garnish with extra lemon zest for a fresh touch.
