Pipeline Pumpkin Ribbons

Neatly arranged ribbons of roasted pumpkin and zucchini form a straight, elongated 'pipeline' across the plate, with halved eggs as pumping stations. The dish refers to the Saudi oil pipeline put back into use after the attack.

Ingredients

  • 1 butternut squash (about 800 g)
  • 2 zucchinis
  • 4 eggs
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp smoked paprika powder
  • salt to taste
  • pepper to taste

Method

  1. Preheat the oven to 200°C (390°F).
  2. Peel the squash and slice it lengthwise into thin ribbons using a peeler or mandoline.
  3. Slice the zucchinis into long, thin ribbons as well.
  4. Toss the pumpkin and zucchini ribbons with olive oil, cumin, paprika, salt, and pepper.
  5. Lay the ribbons in long rows next to each other on a baking sheet lined with parchment, forming one wide, straight line.
  6. Roast the ribbons for 20-25 minutes until soft and lightly caramelized.
  7. Meanwhile, hard-boil the eggs for 8 minutes, cool under cold water, and peel.
  8. Cut the eggs in half.
  9. Arrange the roasted ribbons as a pipeline diagonally across the plate.
  10. Place halved eggs at three points along the pipeline as pumping stations.

Serving notes

  • Serve on a large rectangular plate for the pipeline effect.
  • Drizzle a little extra olive oil over the ribbons for shine.
