Power Outage Parfait

Long, stacked parfait bars with sharp lemon and spicy pepper, arranged like a power pylon with 'wires' of tangy raspberry sauce. This dessert mirrors the tension lines in the news: energy, disruption, and a hint of distrust.

Ingredients

  • 500 ml whipping cream
  • 4 eggs
  • 150 g sugar
  • 2 lemons (zest and juice)
  • 1 red chili pepper (finely chopped, deseeded)
  • 100 g raspberries
  • 2 tbsp powdered sugar
  • 8 ladyfingers
  • 1 tbsp butter (melted)
  • 4 tbsp Greek yogurt

Method

  1. Line a small loaf tin with baking paper.
  2. Whip the cream until stiff.
  3. Beat egg yolks with 100 g sugar until pale yellow.
  4. Add lemon zest, juice, and red chili to the egg mixture.
  5. Gently fold the whipped cream into the egg mixture.
  6. Beat the egg whites until stiff and fold in.
  7. Pour the mixture into the tin and freeze for at least 4 hours.
  8. Crumble the ladyfingers and mix with melted butter. Press into a thin rectangle on baking paper, freeze for 30 minutes.
  9. Puree the raspberries with powdered sugar to make a sauce.
  10. Cut the parfait into long bars.
  11. Place the ladyfinger slab as a 'base' on each plate. Stack two parfait bars diagonally against each other like a power pylon.
  12. Draw lines of raspberry sauce as power wires from the parfait to the plate edge.
  13. Spoon a dollop of Greek yogurt beside the pylon as an 'insulator'.

Serving notes

  • Sprinkle extra lemon zest over the parfait for added sharpness.
  • Garnish with a slice of red chili for the brave.
