Powerbank Landing Soup

Spicy-sour soup with a grilled zucchini powerbank and fiery pepper flame: the landing is hot and sharp.

A spicy-sour tomato soup with sharp pepper strips, featuring a grilled half zucchini as the ‘burning powerbank’. The zucchini is placed diagonally on the soup, with a red chili pepper strip as a flame. The airplane incident is immediately visible on your plate.

Ingredients

  • 2 zucchinis
  • 2 red pointed bell peppers
  • 1 red onion
  • 2 cloves garlic
  • 2 cans diced tomatoes (800 g total)
  • 1 l vegetable stock
  • 2 tbsp olive oil
  • 1 red chili pepper
  • 1 lemon
  • 1 tsp smoked paprika powder
  • salt and pepper to taste
  • fresh coriander (optional, for garnish)

Method

  1. Cut the zucchinis in half lengthwise. Brush with 1 tbsp olive oil and grill them in a grill pan until nicely marked.
  2. Finely chop the red onion and garlic. Slice the bell peppers into strips.
  3. Heat 1 tbsp olive oil in a soup pot. Sauté the onion and garlic for 2 minutes. Add the bell pepper and fry for another 3 minutes.
  4. Add the smoked paprika powder and fry briefly.
  5. Add the diced tomatoes and stock. Bring to a boil and simmer gently for 15 minutes.
  6. Blend the soup smooth with a stick blender. Season with lemon juice, salt, and pepper.
  7. Slice the chili pepper into thin rings.
  8. Pour the soup into deep plates. Place a grilled zucchini half diagonally in each bowl, as a powerbank.
  9. Lay a strip of chili pepper over the zucchini as a flame. Garnish with coriander if desired.

Serving notes

  • Serve immediately, so the 'powerbank' is warm and the flames stay sharp.
  • Provide extra lemon wedges for more tension at the table.
