Prickpoint Salad

Halved eggs as vaccination shots in a warm salad, comforting and instantly recognizable.

A warm, comforting salad with halved eggs in a spiral, mimicking vaccination shots in a circle. Each 'prickpoint' is a halved egg, the spiral symbolizes the outbreak and vaccination campaign. The dish resembles a vaccination round in Kisangani: simple, clear, and soothing.

Ingredients

  • 8 eggs
  • 1 large sweet potato
  • 2 red onions
  • 2 bell peppers (yellow and red)
  • 1 cucumber
  • 200 g mixed salad leaves
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp mustard
  • salt and pepper
  • 1 bunch parsley

Method

  1. Preheat the oven to 200°C.
  2. Peel and dice the sweet potato. Toss with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes on a baking tray.
  3. Boil the eggs for 8 minutes until hard. Cool, peel, and halve.
  4. Slice onions into half rings, peppers into strips, and cucumber into diagonal slices.
  5. Mix salad leaves, roasted sweet potato, onion, pepper, and cucumber in a large bowl.
  6. Whisk together 1 tbsp olive oil, vinegar, mustard, salt, and pepper for the dressing. Toss with the salad.
  7. Arrange the halved eggs in a spiral pattern on top of the salad, yolk side up, to mimic vaccination points.
  8. Sprinkle with chopped parsley.

Serving notes

  • Serve warm for extra comfort.
  • Place the bowl in the center of the table: prickpoints visible to all.
