Puerta del Soup

A row of pepper tents on clear soup: a sober protest on your plate.

Clear Spanish vegetable soup served in deep plates, topped with a row of halved mini bell peppers as tents on the square. The sparse presentation refers to the camping protesters against the housing crisis: a few tents, much empty space.

Ingredients

  • 1 liter vegetable broth
  • 2 carrots
  • 1 leek
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 8 mini bell peppers (red/yellow)
  • 2 medium potatoes
  • 1 bay leaf
  • salt and pepper to taste
  • handful parsley

Method

  1. Cut the onion, carrots, leek and potatoes into large pieces.
  2. Heat olive oil in a soup pot and sauté onion and garlic until translucent.
  3. Add carrot, leek and potato, fry for 2 minutes.
  4. Add the broth and bay leaf, bring to a boil.
  5. Simmer for 20 minutes until vegetables are tender.
  6. Season with salt and pepper, remove bay leaf.
  7. Cut the mini bell peppers in half lengthwise, remove seeds.
  8. Ladle the soup into deep plates.
  9. Place a row of pepper halves, cut side down, on each plate to look like tents.
  10. Garnish with parsley near the tents, not underneath.

Serving notes

  • Serve with some bread, but keep it separate from the plate.
  • Leave part of the plate empty so the row of tents stands out.
