Radar Outage Tartare

Steak tartare as a radar screen: sharp, tangy, and a nod to the airport telecom outage.

A sharp steak tartare, arranged as a radar screen with bright green pickle wedges as radar beams and a central yolk. The circular form refers to the iconic radar screen of air traffic control. Spicy and sour notes add tension, fitting the chaos of the telecom outage.

Ingredients

  • 400 g beef steak (sirloin or tenderloin)
  • 4 egg yolks
  • 8 small pickles
  • 1 shallot
  • 2 tbsp capers
  • 2 tbsp wholegrain mustard
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Tabasco
  • 1 lemon
  • 4 tbsp olive oil
  • salt and pepper to taste
  • 8 slices sourdough bread

Method

  1. Cut the steak into small cubes with a sharp knife.
  2. Finely chop the shallot. Slice the pickles into long thin wedges.
  3. Mix steak, shallot, capers, mustard, Worcestershire sauce, Tabasco, olive oil, salt, and pepper in a bowl.
  4. Shape a round tartare on each plate, about 1 cm thick.
  5. Arrange the pickle wedges in radial lines from the center of the tartare outward, like radar beams.
  6. Place a raw egg yolk in the center of each tartare as the 'radar core'.
  7. Grate lemon zest over the tartare for extra sharpness.
  8. Serve with toasted sourdough bread.

Serving notes

  • Arrange the pickle wedges evenly for a real radar screen effect.
  • Sprinkle the yolk lightly with coarse pepper for extra tension.
  • Serve the bread separately so the radar screen stays intact.
