Railway track of ladyfingers with lemon sabayon and berries: the dessert that puts the strike sharply on the plate.

A sharp-sweet dessert: ladyfingers form a railway track across the plate, with tangy lemon sabayon as ballast and berries as ‘signal lights’. The silhouette of train tracks refers directly to the Belgian rail strike and the tension over cutbacks.

Ingredients

  • 12 ladyfingers
  • 4 egg yolks
  • 80 g sugar
  • 100 ml dry white wine
  • 1 lemon (juice and zest)
  • 100 g blueberries
  • 100 g raspberries
  • 1 tbsp powdered sugar

Method

  1. Separate the eggs and put the yolks in a heatproof bowl.
  2. Add sugar, white wine, lemon juice and zest to the yolks.
  3. Whisk the mixture au bain-marie until light and thick.
  4. Let the sabayon cool slightly, but serve lukewarm.
  5. On each plate, lay out three ladyfingers closely together as rails.
  6. Spoon the lemon sabayon in the middle, between the fingers, as the ‘ballast’ of the track.
  7. Arrange blueberries and raspberries as ‘signal lights’ on and next to the track.
  8. Lightly dust with powdered sugar.

Serving notes

  • Serve on a rectangular plate for the best railway effect.
  • Place the berries at regular intervals like real signals.
  • Let the sabayon flow slightly for a dynamic look.
