Register Rolls with Hack Pepper

Neat register rolls with a sharp filling, like files in a hacked population register.

Four thin rolls of cucumber and salmon are lined up like files, each filled sharply with horseradish and capers. The row refers to the population register: neat, now cut open. A sharp, tangy dressing adds tension and nods to the hack.

Ingredients

  • 1 large cucumber
  • 200 g smoked salmon
  • 100 g cream cheese
  • 2 tbsp chopped capers
  • 2 tbsp grated horseradish (jar)
  • 1 tbsp lemon juice
  • coarse black pepper
  • 1 tbsp fresh dill, chopped
  • 4 tbsp white wine vinegar
  • 1 tsp sugar
  • salt

Method

  1. Wash the cucumber and use a cheese slicer or mandoline to cut 8 long thin strips.
  2. Mix cream cheese, horseradish, capers, lemon juice, dill and a pinch of salt to a smooth filling.
  3. Place a slice of salmon on each cucumber strip and spread with a spoonful of the cream cheese mixture.
  4. Roll the strips tightly into rolls.
  5. Mix white wine vinegar, sugar and plenty of coarse black pepper into a sharp dressing.
  6. Place two rolls per plate, tightly next to each other to form a row of files.
  7. Drizzle the dressing alongside and sprinkle generously with extra pepper.

Serving notes

  • Ensure the rolls are neatly lined up like an open register.
  • Serve on a rectangular plate for the best silhouette.
  • Offer extra dressing on the side for those who like even more bite.
