Release Gate with 25 Openings

A vegetable fence with 25 openings, each filled with an egg: the gate to freedom on your plate.

A precisely grilled vegetable fence of green asparagus and carrot strips, forming 25 openings. Each opening is filled with a soft-boiled quail egg, symbolizing the released prisoners. A solemn presentation, like a gate briefly opened.

Ingredients

  • 32 green asparagus spears
  • 4 large carrots
  • 25 quail eggs
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 lemon
  • 1 tablespoon fresh dill

Method

  1. Peel the carrots and cut them into long, thin strips about the same length as the asparagus.
  2. Boil the carrot strips and asparagus for 2 minutes in plenty of salted water, rinse with cold water, and pat dry.
  3. On a baking tray, lay out a tight grid of asparagus and carrot strips to create 25 openings (5 by 5). Brush with olive oil, sprinkle with salt and pepper.
  4. Grill the vegetable fence for 8 minutes in a hot oven (220°C) until lightly browned, then let cool.
  5. Boil the quail eggs for 3 minutes, peel them carefully.
  6. Place the vegetable fence on a large platter. Fill each opening with a quail egg.
  7. Grate some lemon zest over the whole and garnish with chopped dill.

Serving notes

  • Serve on a square platter for an extra formal look.
  • Stand the fence upright on the plate so the openings are clearly visible.
  • Add a lemon wedge for a fresh touch.
