Relief Parcel Bowls

Four bowls of lentil soup with flatbread lids, stacked like aid parcels—warm, visible comfort, just like the relief in the news.
Ingredients
- 2 onions
- 2 cloves garlic
- 2 carrots
- 2 celery stalks
- 200 g red lentils
- 1.2 l vegetable stock
- 1 can diced tomatoes (400 g)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 pieces flatbread (e.g., Lebanese or Turkish bread, about 10x10 cm each)
- Handful fresh coriander
Method
- Finely chop the onions and garlic.
- Dice the carrots and celery.
- Heat olive oil in a large pan and sauté onion and garlic for 2 minutes.
- Add carrot and celery, cook for 3 minutes.
- Add cumin, coriander, and paprika, cook for 1 minute.
- Add lentils, diced tomatoes, and stock. Bring to a boil.
- Simmer for 20 minutes until the lentils are soft.
- Roughly blend the soup with a stick blender (leave some texture). Season with salt and pepper.
- Divide the soup over four small bowls.
- Place a piece of flatbread on each bowl as a lid, so they look like stacked packages.
- Garnish with fresh coriander.
- Arrange the bowls in a straight line on the table to evoke stacked relief parcels.
Serving notes
- Serve the bowls in a neat row for the best 'relief parcel stack' effect.
- Let everyone open their own 'parcel' by lifting the flatbread.
