Reno Smoke Zones

Oven dish with pepper 'zones' referring to the Reno wildfire evacuation areas.

A warm oven dish of roasted potato wedges and carrot in a large black baking tray. On top, three stripes of red and yellow bell pepper represent the evacuation zones around the Reno wildfire.

Ingredients

  • 1 kg waxy potatoes
  • 400 g carrot
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp thyme
  • salt and pepper to taste

Method

  1. Preheat the oven to 200°C.
  2. Peel the potatoes and cut into wedges.
  3. Peel the carrot and cut into thick half-moons.
  4. Mix potato and carrot with olive oil, paprika, thyme, salt and pepper in a large black oven dish.
  5. Roast for 30 minutes in the middle of the oven, stirring halfway.
  6. Meanwhile, cut the bell peppers into long strips.
  7. After 30 minutes, lay the red and yellow pepper strips as three clear bands across the dish to show the zones.
  8. Roast for another 10 minutes until the peppers are soft.
  9. Serve directly in the dish.

Serving notes

  • Serve in a black oven dish for the 'ash' effect.
  • Lay the pepper strips neatly in zones just before serving.
  • Tasty with grilled meat or vegetarian burgers.
