Renoir’s Escape Trail Soup

Two baguette strips in a green garden, like paintings left behind after a quick escape.

Spicy tomato and pepper soup with two ‘abandoned’ baguette strips in a garden of green herb oil. The strips lie askew, like paintings hastily left behind, referencing the theft and the found loot in the grass.

Ingredients

  • 2 red bell peppers
  • 2 onions
  • 3 cloves garlic
  • 800 g ripe tomatoes
  • 1 red chili pepper
  • 1 tbsp tomato paste
  • 1 l vegetable stock
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 baguette
  • 4 tbsp green herb oil (basil, parsley, olive oil)
  • salt and pepper to taste

Method

  1. Roughly chop peppers, onions, and garlic.
  2. Heat olive oil in a soup pot, sauté onion, garlic, and peppers for 5 min.
  3. Add tomato paste and finely chopped chili, cook for 2 min.
  4. Add chopped tomatoes, cook for 3 min.
  5. Pour in stock, bring to a boil, simmer for 25 min.
  6. Blend soup smooth, season with salt, pepper, and red wine vinegar.
  7. Cut baguette into long strips (20 cm), toast until golden in the oven.
  8. Pour soup into deep plates. Drizzle green herb oil as a ‘garden’ on one side.
  9. Place two baguette strips diagonally in the green oil per plate, as ‘paintings’ in the grass.

Serving notes

  • Serve immediately, so the baguette strips stay crisp.
  • Offer extra green herb oil for those who want more ‘garden’.
