An oven dish where eggplants ‘drive’ through a glassy waiting room of onions and peppers.
Ingredients
- 2 large eggplants
- 2 red bell peppers
- 2 yellow bell peppers
- 2 large onions
- 600 g ground beef
- 2 cloves garlic
- 400 g diced tomatoes (canned)
- 1 red chili pepper
- 2 tbsp tomato paste
- 1 tbsp balsamic vinegar
- 8 sheets filo pastry
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- salt and pepper
Method
- Preheat the oven to 200 °C.
- Slice the eggplants lengthwise into 4 long strips. Brush with oil and grill 5 minutes per side until soft.
- Cut the bell peppers into wide strips and the onions into thick rings.
- Brown the ground beef in a large skillet. Add chopped garlic, chili, paprika, and oregano.
- Stir in tomato paste, cook briefly, then add diced tomatoes and balsamic vinegar. Simmer 10 minutes. Season with salt and pepper.
- Briefly fry the onion rings and pepper strips in another pan with a bit of oil until lightly colored.
- Line a baking tray with parchment. Arrange onion rings and pepper strips as a row of ‘glass doors’ in the center.
- Lay the grilled eggplant slices diagonally over the onions and peppers, as if ‘driving in’.
- Spoon the meat-tomato mixture around the eggplants and peppers.
- Briefly bake the filo sheets golden in the oven or pan. Break into pieces and place around the edge as ‘broken doors’.
- Bake the whole dish for 15 minutes until hot.
- Serve immediately to keep the contrast between crispy and soft.
Serving notes
- Arrange eggplants diagonally, as if driving through the ‘glass door’.
- Sprinkle extra chili over the meat for more tension.
- Serve with a fresh salad for balance.
