Riksdag Rows Parfait

Orderly parfait bars as seat rows: the Swedish Riksdag in dessert form, ready for the result.

A formal dessert of stacked parfait bars and red currants, mimicking the voting rows in the Swedish Riksdag. Each bar represents a seat: white and red, left and right. The whole is neatly aligned on the plate, just like the day's decisive election result.

Ingredients

  • 400 ml heavy cream
  • 4 eggs
  • 120 g sugar
  • 1 vanilla pod
  • 150 g Greek yogurt
  • 100 g red currants
  • 100 g white chocolate
  • 1 lemon (zest)
  • 8 ladyfingers
  • 1 tbsp powdered sugar

Method

  1. Separate the eggs. Beat the yolks with the sugar until pale yellow.
  2. Whip the cream with the vanilla seeds until stiff.
  3. Mix the Greek yogurt and lemon zest into the egg yolk mixture.
  4. Gently fold in the whipped cream.
  5. Roughly chop the white chocolate and mix it in.
  6. Line a rectangular cake tin with parchment paper. Place a layer of ladyfingers on the bottom.
  7. Pour in the parfait mixture and smooth the top.
  8. Freeze for at least 4 hours.
  9. Remove the parfait from the tin and cut into 8 equal bars.
  10. On each plate, place two bars neatly side by side, as seat rows.
  11. Garnish one bar with red currants (center-left), leave the other plain white (right).
  12. Lightly dust with powdered sugar for a formal effect.

Serving notes

  • Serve the bars perfectly straight, with the red and white clearly separated.
  • Use a black plate for extra contrast.
  • Arrange the currants in neat rows, like votes in a voting booth.
