Ring of Fire Salad

Spicy volcano-shaped salad with fiery flavors and a rain of olive ash.

A spicy, layered salad with red and yellow vegetables shaped like a volcano, erupting with a rain of black olive ash. The fiery flavors and sharp acids refer to the volcanic eruption and the Pacific Ring of Fire in the news.

Ingredients

  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1 cucumber
  • 8 sun-dried tomatoes
  • 1 red onion
  • 100 g pitted black olives
  • 200 g feta cheese
  • 1 lemon
  • 4 tbsp olive oil
  • 1 red chili pepper
  • 2 tsp sumac
  • salt and pepper

Method

  1. Cut the red and yellow bell peppers into strips about 1 cm wide.
  2. Slice the cucumber diagonally.
  3. Cut the red onion into thin half rings.
  4. Chop the sun-dried tomatoes.
  5. Cube the feta cheese.
  6. Slice the red chili pepper into thin rings.
  7. Mix olive oil, lemon juice, sumac, salt, and pepper into a dressing.
  8. On a large platter, arrange the bell pepper strips in a cone shape (volcano), red outside, yellow inside.
  9. Place the cucumber slices around the base as the island.
  10. Scatter the red onion, sun-dried tomatoes, and feta around and on the volcano.
  11. Create a 'crater' on top with black olives, letting some tumble down as ash.
  12. Drizzle the dressing over the salad and garnish with chili rings for extra heat.

Serving notes

  • Serve on a large round plate for the volcano effect.
  • Add extra lemon wedges for more tang.
  • Sprinkle extra sumac just before serving for an ashy look.
