Ingredients

  • 300 g risotto rice
  • 1 liter chicken stock
  • 1 lemon (juice and zest)
  • 1 onion
  • 2 cloves garlic
  • 100 ml dry white wine
  • 60 g Parmesan cheese, grated
  • 2 tbsp olive oil
  • 500 g chicken breast
  • 12 green asparagus
  • 5 cherry tomatoes
  • salt and pepper

Method

  1. Finely chop the onion and garlic.
  2. Heat 1 tbsp olive oil in a pan, sauté onion and garlic until translucent.
  3. Add risotto rice and fry for 2 minutes.
  4. Deglaze with white wine and let it evaporate.
  5. Add a ladle of stock, stir until absorbed. Repeat until rice is cooked.
  6. Add lemon zest, juice, and Parmesan. Season with salt and pepper.
  7. Heat 1 tbsp olive oil in a grill pan. Grill the asparagus until lightly browned.
  8. Fry the chicken breast in another pan until golden and cooked through. Slice into long strips.
  9. Spoon the risotto into a rectangular dish as a runway.
  10. Lay the chicken strip diagonally over the risotto as the approach route.
  11. Arrange the grilled asparagus as five 'laser beams' across the runway.
  12. Place the five cherry tomatoes on the asparagus as incidents.

Serving notes

  • Serve on a rectangular platter for the runway effect.
  • Sprinkle extra lemon zest for extra sharpness.
  • Arrange the asparagus at sharp angles for the 'laser' feeling.
