Runway with Lasers

Risotto as runway, asparagus as lasers, tomatoes as incidents: news plated for dinner.
Ingredients
- 300 g risotto rice
- 1 liter chicken stock
- 1 lemon (juice and zest)
- 1 onion
- 2 cloves garlic
- 100 ml dry white wine
- 60 g Parmesan cheese, grated
- 2 tbsp olive oil
- 500 g chicken breast
- 12 green asparagus
- 5 cherry tomatoes
- salt and pepper
Method
- Finely chop the onion and garlic.
- Heat 1 tbsp olive oil in a pan, sauté onion and garlic until translucent.
- Add risotto rice and fry for 2 minutes.
- Deglaze with white wine and let it evaporate.
- Add a ladle of stock, stir until absorbed. Repeat until rice is cooked.
- Add lemon zest, juice, and Parmesan. Season with salt and pepper.
- Heat 1 tbsp olive oil in a grill pan. Grill the asparagus until lightly browned.
- Fry the chicken breast in another pan until golden and cooked through. Slice into long strips.
- Spoon the risotto into a rectangular dish as a runway.
- Lay the chicken strip diagonally over the risotto as the approach route.
- Arrange the grilled asparagus as five 'laser beams' across the runway.
- Place the five cherry tomatoes on the asparagus as incidents.
Serving notes
- Serve on a rectangular platter for the runway effect.
- Sprinkle extra lemon zest for extra sharpness.
- Arrange the asparagus at sharp angles for the 'laser' feeling.
