Sabotage Blaze Parfait

A fiery parfait dessert, with sharp flavors and the silhouette of a burning building.

A sharp-sour parfait, built as a sea of flames across the plate: bright orange mango, red raspberries, and a dark chocolate 'ash layer'. The burning shopping center as dessert, with flavors that linger and tingle.

Ingredients

  • 300 ml whipping cream
  • 3 eggs
  • 100 g sugar
  • 1 mango
  • 150 g raspberries (fresh or frozen)
  • 100 g dark chocolate
  • 2 tbsp lemon juice
  • 1 tsp chili flakes
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tbsp water
  • 1 pinch salt

Method

  1. Line a loaf tin with plastic wrap.
  2. Whip the cream until stiff and chill.
  3. Separate the eggs. Beat the yolks with 75 g sugar until light and fluffy.
  4. Melt the chocolate au bain-marie, let cool slightly.
  5. Mix the melted chocolate into the yolk mixture.
  6. Whip the egg whites with 25 g sugar and a pinch of salt until stiff.
  7. Gently fold the cream and egg whites into the chocolate-yolk mixture.
  8. Pour 2/3 of the mixture into the tin for the 'ash layer', freeze.
  9. Puree the mango with lime juice, honey, and chili flakes into a smooth sauce.
  10. Puree the raspberries with lemon juice and water into a bright red sauce.
  11. After 1 hour: remove the tin from the freezer, pour mango and raspberry sauces over in flame shapes, drag a fork through the parfait to create 'flames'.
  12. Freeze for at least 3 more hours.
  13. Turn out the parfait onto a platter. Cut into rectangles, stand upright on the plate as 'building'.
  14. Drag remaining sauces and extra chili flakes as flames up the building on the plate.

Serving notes

  • Serve with extra chili flakes for more tension.
  • Place the rectangles tightly together for the shopping center silhouette.
  • Let the sauces run as fiery lines across the plate.
