Ingredients

  • 2 aubergines
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 4 medium pickles
  • 2 eggs
  • 2 tbsp capers
  • 1 red onion
  • 1 red chili pepper
  • 3 tbsp white wine vinegar
  • 3 tbsp olive oil
  • salt and pepper

Method

  1. Preheat the oven to 220°C.
  2. Slice the aubergines lengthwise into 1 cm thick slices.
  3. Halve the bell peppers, remove seeds, and cut into wide strips.
  4. Place aubergine and peppers on a baking tray, drizzle with olive oil, salt, and pepper. Roast for 20 minutes until soft and slightly charred.
  5. Meanwhile, hard-boil the eggs (8 minutes), cool and peel them.
  6. Slice the pickles lengthwise in half.
  7. Cut the red onion into thin rings and the chili into thin strips.
  8. In a bowl, mix capers, red onion, chili, white wine vinegar, and a tablespoon of olive oil for a sharp dressing.
  9. On a large platter, arrange the aubergine slices as the cross of a drone. Place pepper strips as the four diagonal arms.
  10. Place a halved egg in the center as the 'dome.' On each 'arm,' lay a half pickle as a propeller.
  11. Drizzle everything with the dressing and garnish with capers.

Serving notes

  • Serve cold or lukewarm for extra tension.
  • Place the platter in the center: sabotage in plain sight.
