Salad Court Under Pressure

A precisely arranged salad in the shape of the International Criminal Court logo: white beans as the court, red pepper as pressure, with two edible markers—a radish slice (Japan) and a mango slice (Senegal)—representing the sanctioned staff. Solemn, simple, with diplomatic colors.

Ingredients

  • 200 g mixed lettuce (arugula, lamb's lettuce, little gem)
  • 1 can white beans (400 g), rinsed
  • 1 red bell pepper
  • 1 cucumber
  • 4 radishes
  • 1 small mango
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • salt and pepper to taste

Method

  1. Wash the lettuce and spread evenly on a large, round white plate.
  2. Rinse the white beans and pat dry. Arrange them in a clear, round circle in the center (the court).
  3. Cut the red bell pepper into thin strips. Lay them tightly around the bean circle, symbolizing pressure.
  4. Slice the cucumber thinly and arrange as a second ring outside the pepper.
  5. Slice two radishes thinly. Place one slice on the left of the bean circle (Japan).
  6. Slice the mango thinly. Place one slice on the right of the bean circle (Senegal).
  7. Mix olive oil, white wine vinegar, salt, and pepper into a dressing. Drizzle over the salad just before serving.

Serving notes

  • Serve on a large, white, round plate for maximum ICC effect.
  • Place the salad in the center of the table with a spoon to keep the circles visible.
