Salad with the Pearl

A vibrant salad tribute to the Girl with a Pearl Earring, complete with edible earring and turban.

A generous, colorful salad arranged as the Girl with a Pearl Earring: an oval platter as canvas, cucumber ribbons as turban, a half yellow tomato as earring, and pearl-white mozzarella for accent. A festive nod to Japan's Vermeer craze.

Ingredients

  • 2 heads romaine lettuce
  • 200 g cherry tomatoes (yellow and red)
  • 1 cucumber
  • 2 balls mozzarella
  • 1 small red onion
  • 1 avocado
  • 100 g smoked chicken fillet (or vegetarian alternative)
  • 1 lemon
  • 4 tbsp olive oil
  • 1 tbsp white balsamic vinegar
  • salt and pepper
  • handful fresh basil

Method

  1. Wash the romaine lettuce and arrange the leaves in an oval on a large platter as the 'painting' base.
  2. Slice the cucumber into long ribbons with a peeler. Drape them diagonally over the lettuce as a turban.
  3. Slice the mozzarella. Use one ball as the 'pearl' (earring) at the lower right of the oval.
  4. Halve a yellow cherry tomato and place it next to the mozzarella for an extra earring accent.
  5. Thinly slice the red onion and avocado. Arrange these as facial lines and mouth above the lettuce to suggest a face.
  6. Slice the chicken fillet into strips and place subtly as shadow on the side of the face.
  7. Cut the remaining tomatoes into wedges and scatter over the salad for color and flavor.
  8. Make a dressing from lemon juice, olive oil, balsamic, salt, and pepper. Drizzle over the salad.
  9. Garnish with fresh basil for a festive, fresh touch.

Serving notes

  • Serve on a large oval platter for the painting effect.
  • Let everyone scoop their own piece of 'art'.
  • Set extra mozzarella and tomatoes aside for fans of the 'pearl'.
