A carpaccio shaped like an old printer, sharply dressed and ready for sanctions.

Thin slices of beef carpaccio form the silhouette of an old-school printer, with strips of pickle as paper. The dish refers to the court possibly having to fall back on printing. The sharp dressing and pickled onions create tension and pull the flavors apart.

Ingredients

  • 200 g beef carpaccio (store-bought or homemade)
  • 2 medium pickles
  • 1 small red onion
  • 2 tbsp white wine vinegar
  • 1 tbsp capers
  • 50 g Parmesan cheese, shaved
  • 4 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp coarse mustard
  • Salt and pepper to taste
  • Handful of arugula

Method

  1. Slice the red onion into thin rings and soak in white wine vinegar with a pinch of salt for 10 minutes.
  2. Cut the pickles lengthwise into long, thin slices.
  3. Mix olive oil, lemon juice, mustard, salt and pepper into a dressing.
  4. Arrange the carpaccio on four plates in a rectangle, resembling a printer body.
  5. Place a row of pickle slices at the top of each rectangle as 'paper' coming out of the printer.
  6. Scatter the pickled onion and capers over the carpaccio.
  7. Drizzle the dressing over everything.
  8. Garnish with Parmesan and a bit of arugula as 'printer buttons'.

Serving notes

  • Serve with extra pickle slices as 'spare paper' on the side.
  • Add an extra twist of pepper for more tension.
