Sandringham Search Tower

Neatly stacked, with six eggs as surveillance: a house search in starter form.

A layered tower of toasted white bread rounds, filled with a sharp smoked mackerel and horseradish mousse. The tower is surrounded by six halved quail eggs as undercover police cars: tidy on the outside, with a spicy filling inside. The whole dish depicts the estate search.

Ingredients

  • 8 slices white sandwich bread
  • 200 g smoked mackerel
  • 100 g cream cheese
  • 1 tbsp horseradish paste
  • 2 tbsp crème fraîche
  • 6 quail eggs
  • 1 tbsp chives, finely chopped
  • 1 tsp lemon zest
  • pepper and salt
  • olive oil

Method

  1. Preheat the oven to 180°C.
  2. Cut a circle from each bread slice using a glass or cutter (total 8). Brush lightly with olive oil and toast for 8-10 minutes until golden.
  3. Boil the quail eggs for 3 minutes, cool under cold water and peel. Slice them lengthwise.
  4. Remove skin and bones from the mackerel. Mix with cream cheese, horseradish, crème fraîche, lemon zest, chives, pepper, and salt until smooth.
  5. For each plate, build a tower: one bread round, a layer of mackerel mousse, another bread round, another layer of mousse, finish with a bread round.
  6. Arrange six halved quail eggs around each tower as 'undercover cars'.
  7. Garnish with extra chives and a drizzle of olive oil.

Serving notes

  • Serve neatly on a white plate for the 'estate' effect.
  • Place the eggs in a half-circle, as if staking out the tower.
