Sharp Brazilian soup with two halved eggs as ballot box—just the tension of a second round.

A Brazilian, sharp-sour tomato and pepper soup with two halved boiled eggs as voting buttons, facing each other in a circle. The eggs form a recognizable ballot box with two round openings: the second round. The sharp and fresh flavors reflect the election tension.

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 2 red bell peppers
  • 1 red chili pepper
  • 1 green chili pepper
  • 800 g ripe tomatoes
  • 1 lime
  • 1 l vegetable stock
  • 2 tbsp olive oil
  • 4 eggs
  • 1 can black beans (400 g, drained)
  • salt
  • freshly ground black pepper
  • fresh coriander (a handful)

Method

  1. Finely chop the onion and garlic.
  2. Slice the bell peppers and chili peppers into strips (remove seeds for less heat if desired).
  3. Cut the tomatoes into pieces.
  4. Heat the olive oil in a large pan and sauté onion and garlic for 2 minutes.
  5. Add peppers, chilies, and tomatoes, cook for 5 minutes over medium heat.
  6. Add the stock and bring to a boil. Let simmer for 20 minutes.
  7. Meanwhile, hard-boil the eggs for 8 minutes, cool in cold water, and peel.
  8. Add the black beans to the soup and cook for another 5 minutes.
  9. Roughly blend the soup with a stick blender (some texture should remain).
  10. Season with salt, pepper, and the juice of 1 lime.
  11. Slice the eggs lengthwise.
  12. Pour the soup into bowls. Place two egg halves opposite each other at the rim, as the openings of a ballot box. Garnish with fresh coriander.

Serving notes

  • Serve with tortilla chips for extra crunch.
  • Offer extra lime wedges for those who want more sourness.
  • Let the egg halves remain clearly visible: everyone will see the ballot box and the second round.
