Secret File Rolls

Tidy endive rolls with a spicy salad: neat on the outside, a sting on the inside.

Four neat Belgian endive boats filled with a sharp salad, rolled into a stack of ‘secret documents’. Each roll is tidy outside, but hides a spicy filling. Fits the news: state secrets, neatly packaged but with a scandal inside.

Ingredients

  • 4 heads Belgian endive
  • 2 hard-boiled eggs
  • 1 small red onion
  • 100 g smoked chicken breast
  • 2 tbsp mayonnaise
  • 1 tbsp coarse mustard
  • 1 tbsp finely chopped chives
  • salt and pepper to taste

Method

  1. Cut the base off the endive heads and separate 16 large leaves.
  2. Finely chop the eggs, red onion, and smoked chicken breast.
  3. Mix egg, onion, chicken, mayonnaise, mustard, and chives into a salad. Season with salt and pepper.
  4. Place a tablespoon of salad on the wide end of each endive leaf and roll up tightly.
  5. Repeat until you have 16 rolls.
  6. Arrange the rolls in a neat row on a platter, forming a stack of ‘files’.

Serving notes

  • Stack the rolls neatly like a file stack on a rectangular platter.
  • Garnish with an extra sprinkle of chives for ‘leaked’ information.
