Ingredients

  • 4 large red pointed peppers
  • 200 g risotto rice
  • 1 liter vegetable stock
  • 1 lemon (juice and zest)
  • 1 onion
  • 2 cloves garlic
  • 1 green bell pepper
  • 1 zucchini
  • 100 g feta cheese
  • 2 tbsp capers
  • 2 tbsp olive oil
  • 1 tsp chili flakes
  • salt and pepper

Method

  1. Preheat the oven to 200°C.
  2. Slice the red pointed peppers in half lengthwise, remove seeds.
  3. Finely chop the onion, garlic, green pepper, and zucchini.
  4. Sauté onion and garlic in 1 tbsp olive oil in a large pan.
  5. Add risotto rice and cook for 2 minutes.
  6. Deglaze with lemon juice, add stock gradually until rice is cooked (about 20 minutes).
  7. Stir in green pepper, zucchini, feta, capers, lemon zest, and chili flakes. Season with salt and pepper.
  8. Fill the halved red peppers with the risotto mixture.
  9. Place peppers on a baking tray, drizzle with remaining olive oil.
  10. Bake for 20 minutes until peppers are soft.
  11. Arrange on a large platter: make a diagonal 'banner' with the peppers, some upright, some at angles, over a bed of risotto.

Serving notes

  • Garnish with extra lemon zest for sharpness.
  • Serve with a fresh green salad for contrast.
  • Arrange the peppers in a striking diagonal line across the plate.
