Shadow Fleet Carpaccio with Sharp Interception

Thin slices of smoked salmon form an oil tanker at sea, with capers as 'transponders' and a sharp lemon-chili dressing. A stripe of anchovy cuts across the ship: interception visualized. The recognizable tanker silhouette and sharp, tense flavors echo the news.

Ingredients

  • 200 g smoked salmon in long slices
  • 8 anchovy fillets
  • 2 tbsp capers
  • 1 red chili pepper
  • 1 lemon
  • 4 tbsp extra virgin olive oil
  • Black pepper from the mill
  • Sea salt
  • Arugula for base (approx. 40 g)

Method

  1. Cut the smoked salmon into long, wide strips.
  2. Slice the chili pepper into thin rings.
  3. Mix olive oil with juice of half a lemon, add half the chili rings.
  4. Place a layer of arugula on each plate as the 'sea'.
  5. Lay two wide slices of salmon per plate in the shape of a long ship (tanker) in the center of the arugula.
  6. Lay an anchovy fillet across the middle of the 'ship' as an interception line.
  7. Scatter the capers as 'transponders' over the ship.
  8. Drizzle the dressing over the salmon and arugula.
  9. Garnish with extra chili, lemon zest, and black pepper.

Serving notes

  • Serve cold, immediately after plating.
  • Add lemon wedges for extra sharpness.
  • Ensure the anchovy visibly 'cuts' the ship.
