Sharp Shahed Slices

Long vegetables form a menacing drone, with a spicy dressing bringing the tension to the plate.

Thin, long slices of roasted eggplant and zucchini form the sharp, slanted silhouette of a threatening drone. A spicy, sour dressing and red chilies as warning lights capture the tension of the news both in shape and taste.

Ingredients

  • 1 large eggplant
  • 2 zucchinis
  • 2 red pointed bell peppers
  • 1 red onion
  • 2 red chili peppers
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 clove garlic
  • 1 tsp honey
  • salt and pepper to taste

Method

  1. Preheat the oven to 220°C and line a baking tray with parchment paper.
  2. Slice the eggplant and zucchinis lengthwise into long, thin strips.
  3. Cut the bell peppers lengthwise into strips. Slice the red onion into thin half rings.
  4. Place the eggplant, zucchini, and bell pepper on the tray, drizzle with 2 tbsp olive oil, salt, and pepper.
  5. Roast the vegetables for 20 minutes until golden brown and lightly caramelized. Let cool.
  6. Make the dressing: mix 1 tbsp olive oil, lemon juice, red wine vinegar, finely chopped garlic, honey, and some salt.
  7. Slice the red chilies into thin rings.
  8. Arrange on a large plate: create a slanted, elongated shape with the eggplant and zucchini as the drone body, bell pepper as wings, onion as details. Place chili rings as 'warning lights' on the ends.
  9. Drizzle the dressing over the vegetables just before serving.

Serving notes

  • Serve on a large white plate so the silhouette is clearly visible.
  • Offer extra dressing on the side for those who want more heat.
  • Garnish with fresh coriander for extra color.
