Sheet Escape Soup

Soup with tagliatelle sheets draped over breadsticks: an edible escape route, sharp and suspenseful in taste.

Spicy, tangy tomato-vegetable soup with wide tagliatelle 'sheets' draped over breadsticks, mimicking an improvised escape route. The breadsticks lie diagonally across the bowl, resembling a rope ladder over a prison wall. A wink to the master escape artist and his iconic sheet trick.

Ingredients

  • 2 onions
  • 3 cloves garlic
  • 2 red bell peppers
  • 2 carrots
  • 2 cans chopped tomatoes (800 g)
  • 1 liter vegetable stock
  • 200 g tagliatelle (preferably wide ribbons)
  • 1 tbsp red wine vinegar
  • 1 tsp chili flakes
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 long breadsticks (grissini or soup sticks)
  • Fresh basil (for garnish)

Method

  1. Roughly chop onion, garlic, peppers, and carrots.
  2. Heat olive oil in a large pot, sauté onion and garlic for 3 minutes.
  3. Add peppers and carrots, cook for 5 minutes more.
  4. Add chopped tomatoes, stock, chili flakes, and paprika. Bring to a boil, simmer for 20 minutes.
  5. Cook tagliatelle al dente according to package. Drain.
  6. Roughly blend the soup with an immersion blender, leaving some texture. Season with vinegar, salt, and pepper.
  7. Lay 2 breadsticks diagonally across each bowl, like a 'rope ladder' over the bowl.
  8. Drape several tagliatelle strands loosely over the breadsticks, like sheets over the 'wall'.
  9. Pour hot soup into the bowl without disturbing the setup. Garnish with fresh basil.

Serving notes

  • Serve with extra breadsticks on the side.
  • Let guests pull the 'sheets' off the ladder themselves.
  • For extra heat: put chili flakes on the table.
