Short-Circuit Tart

A sharp, tangy lemon tart, built to resemble a power line tower: crisp almond sticks as wires, lemon curd as the spark, blueberries as insulators. The plating shows a transmission mast with visible 'short circuit', referencing the sabotage of power lines.

Ingredients

  • 1 roll chilled tart dough
  • 100 g almond sticks
  • 3 eggs
  • 125 g sugar
  • 2 lemons (juice and zest)
  • 75 g butter
  • 100 g blueberries
  • 1 tbsp powdered sugar
  • 2 tbsp apricot jam
  • 1 tbsp cornstarch
  • 1 pinch salt

Method

  1. Preheat the oven to 180°C.
  2. Line 4 small tart pans with the dough. Prick the base with a fork.
  3. Blind bake the tart shells for 12 minutes (with parchment and weights), then remove the paper and bake for another 5 minutes.
  4. Toast the almond sticks in a dry pan until golden.
  5. Whisk eggs, sugar, lemon zest and juice, cornstarch, and salt in a saucepan. Heat while stirring until thickened.
  6. Stir the butter into the warm lemon curd and let cool.
  7. Brush the cooled tart shells with a thin layer of apricot jam.
  8. Fill the tarts with lemon curd.
  9. Lay 3-4 almond sticks diagonally across each tart as power lines. Stand 2-3 almond sticks upright as the mast.
  10. Place blueberries as insulators at the intersections. Dust with powdered sugar for the 'spark' effect.

Serving notes

  • Serve on a dark plate for extra drama.
  • Drizzle extra lemon juice over the almond sticks for an extra tangy kick.
