Sinkhole Surprise

Lemon-lime mousse with chocolate sinkhole and cookie driveway: tension on the plate, just like Cage's villa.

A sharp lemon-lime mousse with a deep dark chocolate hole and a crisp cookie 'driveway', nodding to the sinkhole at the beach villa. The plate shows a villa edge with a gaping hole beside it.

Ingredients

  • 3 lemons (juice and zest)
  • 2 limes (juice and zest)
  • 150 g sugar
  • 400 ml whipping cream
  • 3 eggs
  • 4 sheets gelatin
  • 100 g dark chocolate
  • 8 ladyfingers
  • 50 g butter
  • 1 tbsp powdered sugar
  • pinch of salt

Method

  1. Soak the gelatin in cold water.
  2. Zest and juice the lemons and limes. Mix the juice with half the sugar.
  3. Separate the eggs. Beat the yolks with the remaining sugar until pale.
  4. Gently heat the citrus mixture. Add the squeezed gelatin and dissolve.
  5. Mix the warm citrus mixture into the egg yolks.
  6. Whip the cream stiff with a pinch of salt.
  7. Fold the whipped cream gently into the citrus-egg mixture.
  8. Beat the egg whites stiff and fold in lightly.
  9. Divide the mixture over 4 wide bowls or deep plates. Chill for at least 3 hours.
  10. Melt the dark chocolate au bain-marie. Pour a 6 cm circle per person onto baking paper, let harden.
  11. Crumble the ladyfingers and mix with melted butter and powdered sugar. Form a narrow strip (the driveway) on each plate up to the mousse edge.
  12. Carefully cut out a chocolate circle from the center of the mousse to create a deep hole. Lean the chocolate circle against the hole.
  13. Grate extra lemon and lime over the mousse for sharpness.

Serving notes

  • Serve on white plates for maximum contrast with the 'sinkhole'.
  • Lay the cookie strip clearly as a driveway up to the mousse.
  • Keep the hole and slanted chocolate visible for dramatic effect.
