Smoldering Peat Dessert

Chocolate crumble with pears and ice cream, echoing a smoldering peatland in dessert form.

Warm chocolate crumble with vanilla ice cream, served in a deep dish. Halved pears and dark crumbs on top create the silhouette of a smoldering peatland with flare-ups, referencing the ongoing underground fire in the Hoge Venen.

Ingredients

  • 150 g dark chocolate
  • 100 g flour
  • 75 g butter
  • 75 g sugar
  • 2 large conference pears
  • 1 tub vanilla ice cream (500 ml)
  • 1 tbsp cocoa powder
  • 1 tsp cinnamon
  • 1 pinch salt

Method

  1. Preheat the oven to 180°C.
  2. Melt 75 g dark chocolate and the butter together in a bain-marie.
  3. Mix flour, sugar, cocoa powder, cinnamon, and salt in a bowl.
  4. Add the chocolate mixture and mix into crumbs.
  5. Cut the pears in half lengthwise, remove the core.
  6. Place the pear halves cut side down in a deep baking dish, tips pointing up like hills.
  7. Sprinkle the chocolate crumble around the pears, partially covering them to resemble peat mounds.
  8. Bake for 25 minutes until the crumble is crisp.
  9. Scoop vanilla ice cream between the pears when serving, as wet spots in the peat.
  10. Grate the remaining chocolate over the dish for a smoldering effect.

Serving notes

  • Serve in a deep dish for the 'meters deep' effect.
  • Let the ice cream melt over the warm crumble to 'extinguish' the fire.
