Solidarity Soup in a Box

Bean soup in a box-shaped dish, baby corns as parcels, bay leaf as a shipping label.

A hearty Mexican-Cuban black bean soup served in a rectangular dish, echoing the aid boxes. Three whole baby corns as 'packages' with a bay leaf 'label' on top. Comforting, warm, quick to serve.

Ingredients

  • 2 cans black beans (400 g each)
  • 1 onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 liter vegetable stock
  • 2 bay leaves (plus 1 extra for garnish)
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 baby corn (canned)
  • 2 tbsp olive oil
  • salt and pepper to taste

Method

  1. Finely chop the onion and garlic.
  2. Dice the bell peppers.
  3. Heat olive oil in a large pan, sauté onion and garlic for 2 minutes.
  4. Add bell peppers and cook for 3 minutes.
  5. Add beans, stock, cumin, paprika, and 2 bay leaves.
  6. Bring to a boil, lower heat, and simmer for 15 minutes.
  7. Remove bay leaves. Partially blend the soup for a thick but textured consistency.
  8. Season with salt and pepper.
  9. Pour the soup into a rectangular oven dish or baking tray for the box effect.
  10. Place 1 baby corn per serving on the soup and a bay leaf beside it as a 'label'.
  11. Serve warm.
