Sovereignty on Ice

Greenland as a salad: crisp, cool, and bordered with feta and beetroot as symbols of influence.

A composed salad shaped like Greenland: iceberg lettuce as the island, feta blocks as US 'bases', and a border of Danish beetroot. Presented formally, like a map on a white plate, referencing the preservation of sovereignty.

Ingredients

  • 1 head iceberg lettuce
  • 200 g feta cheese, cubed
  • 2 large cooked beets
  • 1 cucumber
  • 1 red onion
  • 4 tbsp olive oil
  • 2 tbsp white wine vinegar
  • salt and pepper to taste

Method

  1. Wash the iceberg lettuce and separate large leaves. Arrange them in the shape of Greenland on a large white plate.
  2. Cut the feta into 2 cm cubes. Place these along the 'coastline' as symbolic US bases.
  3. Slice the beets thinly. Make a narrow border along one side of the island as the Danish edge.
  4. Slice the cucumber into half-moons and place a few along the coast as 'icebergs'.
  5. Slice the red onion into thin rings and scatter loosely over the salad.
  6. Mix olive oil, vinegar, salt, and pepper for a dressing. Drizzle over the salad just before serving.

Serving notes

  • Serve on a large white plate for a map effect.
  • Stand the feta cubes upright for extra relief.
  • Give the composition space: do not overcrowd the plate.
