Splitting Vote Cake

A dessert shaped like a ballot: a rectangular lemon-lime cheesecake with a sharp dividing line down the middle. The two halves are just uneven, echoing Iceland’s narrow referendum result.

Ingredients

  • 200 g digestive biscuits
  • 80 g unsalted butter
  • 400 g cream cheese
  • 200 g Greek yogurt
  • 120 g sugar
  • 2 limes (juice and zest)
  • 1 lemon (juice and zest)
  • 3 eggs
  • 2 tbsp cornstarch
  • pinch of salt
  • 4 tbsp lemon curd

Method

  1. Preheat the oven to 160°C.
  2. Line a rectangular baking tin (about 20x30 cm) with parchment paper.
  3. Crush the biscuits and mix with melted butter. Press firmly into the bottom of the tin.
  4. Beat cream cheese, yogurt, sugar, lemon and lime zest and juice, eggs, cornstarch, and salt until smooth.
  5. Pour the mixture over the biscuit base.
  6. Bake the cheesecake for 40-45 minutes until just set.
  7. Let cool completely, then chill for at least 2 hours.
  8. Cut the cheesecake into two uneven parts with a sharp, diagonal line. Arrange the pieces slightly apart on a platter so the split is visible.
  9. Spread lemon curd on top for extra sharpness.

  • Serve on a large platter so the 'split' is visible.
  • Garnish with extra lemon and lime zest for color and sharpness.
  • Place the pieces just off-center to emphasize the size difference.
