Starlight Parade Salad

A tropical star carousel on your plate, festive and vibrant, in tribute to the Walk of Fame.

A festive, colorful salad shaped as a big star on a square platter, referencing Angélique Kidjo's Walk of Fame star. Tropical West African flavors with avocado, mango, black beans, and feta. Edible 'tiles' of cucumber and star-shaped mango and beet pieces as markers.

Ingredients

  • 2 ripe mangoes
  • 2 avocados
  • 1 can black beans (400 g), drained
  • 1 cucumber
  • 200 g feta cheese
  • 1 small red onion
  • 100 g lamb's lettuce
  • 1 cooked red beetroot
  • juice of 1 lime
  • 4 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp ground cumin
  • salt and pepper

Method

  1. Slice the mangoes and use a (cookie) cutter to make 8 stars. Cut the rest into cubes.
  2. Slice the beetroot thinly and cut out 8 small stars. Dice the rest.
  3. Halve the avocados, remove the pit, and dice the flesh.
  4. Cut the feta into cubes.
  5. Slice the cucumber lengthwise into thin strips, then cut into squares (for 'tiles').
  6. Finely chop the red onion.
  7. Mix lamb's lettuce, mango and beet cubes, avocado, black beans, feta, and red onion in a bowl.
  8. Whisk together lime juice, olive oil, honey, cumin, salt, and pepper for the dressing.
  9. Toss the dressing through the salad.
  10. Arrange the cucumber tiles as a mosaic on a large square platter. Heap the salad in a big star shape in the center.
  11. Decorate the star with mango and beetroot stars as 'Walk of Fame' stars on top.

Serving notes

  • Serve on a square platter for the Walk of Fame effect.
  • Garnish with extra lime wedges around the edge for color.
  • Arrange the mango and beetroot stars neatly as eye-catchers.
