Borscht with halved eggs as faltering Starlink satellites in a spicy, sour broth.
Ingredients
- 1 kg red beets, peeled and diced
- 2 large carrots, sliced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 bay leaves
- 2 tbsp tomato paste
- 1.5 l vegetable broth
- 2 tbsp vinegar
- 1 tbsp sugar
- 200 g white cabbage, finely shredded
- 4 waxy potatoes, diced
- 4 eggs
- 4 tbsp sour cream
- 2 tbsp fresh dill, chopped
- 2 tbsp sunflower oil
- Salt and pepper
Method
- Heat the oil in a large soup pot and sauté onion and garlic until translucent.
- Add carrot, beet, and tomato paste, cook for 5 minutes.
- Pour in the broth, add bay leaves, vinegar, and sugar. Bring to a boil.
- Add potato and cabbage. Simmer for 30 minutes until everything is tender.
- Meanwhile, hard-boil the eggs, peel and halve them.
- Season the soup with salt and pepper.
- Ladle the soup into deep bowls. On each bowl, arrange three egg halves in a broken arc along the rim, as a Starlink arc.
- Garnish with a spoonful of sour cream and some dill.
Serving notes
- Serve with rye bread for extra Eastern European flair.
- Always arrange the egg halves in the same arc on each bowl for the recognizable Starlink silhouette.
