A spicy rocket of chicken and sweet potato, landed in a sharp salsa – tension on your plate.

Long, angled chicken fillets form the megarocket; a sweet potato wedge as the booster and red chili as fiery flames. All lands on a ring of tangy, sharp salsa verde. The silhouette: a rocket just launched, echoing SpaceX’s tense flight.

Ingredients

  • 4 large chicken breasts
  • 2 large sweet potatoes
  • 2 red chili peppers
  • 1 bunch coriander
  • 2 limes
  • 1 bunch parsley
  • 1 clove garlic
  • 2 tbsp capers
  • 4 tbsp olive oil
  • 1 red onion
  • salt and black pepper
  • 1 tsp ground cumin

Method

  1. Preheat the oven to 200°C.
  2. Peel the sweet potatoes and cut them into thick, long pieces (about 10 cm).
  3. Place the potato pieces on a baking tray, drizzle with 2 tbsp olive oil, salt, pepper, and cumin. Roast for 25 minutes until cooked and lightly caramelized.
  4. Pat the chicken breasts dry and trim if needed to keep them long.
  5. Heat 2 tbsp olive oil in a grill pan. Grill the chicken until golden and cooked through (about 10 minutes). Season with salt and pepper.
  6. Halve the chili peppers lengthwise, remove seeds, slice into long thin strips.
  7. Make salsa verde: finely chop coriander, parsley, garlic, capers, and red onion. Mix with juice of 2 limes, 2 tbsp olive oil, salt, and pepper.
  8. Spread a broad ring of salsa verde on each plate.
  9. Place a sweet potato piece diagonally as the 'booster' on the salsa.
  10. Lay a chicken fillet diagonally on the potato so together they form a rocket.
  11. At the base, arrange the chili strips as fiery flames.

Serving notes

  • Serve with extra lime wedges for more sharpness.
  • Garnish with fresh coriander for color and tension.
  • Stand the whole on its end for the best rocket effect.
