Steering Bolt Parfait

A lemon parfait with a cookie steering wheel: sharp, fresh, and a nod to Volkswagen’s faulty steering bolt.

A sleek, cylindrical lemon parfait with a crisp, diagonally placed cookie as a steering wheel. Sharp citrus and a hint of pepper for tension. The whole dish nods to Volkswagen’s recall by mimicking the striking ‘bolt’ on the plate.

Ingredients

  • 4 lemons (organic, for juice and zest)
  • 3 eggs
  • 150 g fine granulated sugar
  • 250 ml whipping cream
  • 1 pinch white pepper
  • 1 pinch salt
  • 100 g kletskoppen (or other crisp, long cookies)
  • 1 tbsp powdered sugar (for finishing)

Method

  1. Zest and juice the lemons. Set zest aside.
  2. Separate the eggs. Whisk yolks with sugar until pale and fluffy.
  3. Add lemon juice, zest, pepper, and salt to the yolk mixture.
  4. Whip the cream until stiff peaks form.
  5. Beat the egg whites until stiff in a clean bowl.
  6. Fold whipped cream into the lemon-yolk mixture, then gently fold in the egg whites.
  7. Line small cylindrical glasses or molds with plastic wrap. Fill with the parfait mixture. Freeze for at least 4 hours.
  8. Turn out parfaits onto plates. Insert a long cookie diagonally into each parfait to resemble a steering wheel.
  9. Dust with powdered sugar for a metallic effect.

Serving notes

  • Serve straight from the freezer for sharp edges.
  • Always place the cookie diagonally so the steering wheel is visible.
  • Optionally garnish with extra lemon zest for added sharpness.
