A golden cherry tart as an ode to the art heist and the sweet return.

A golden-brown almond cherry tart, glossy like a masterpiece, served with a brushstroke of cherry sauce. Inspired by Cézanne’s stolen painting and its triumphant return. For the sweet taste of victory.

Ingredients

  • 200 g almond flour
  • 100 g all-purpose flour
  • 150 g unsalted butter (room temperature)
  • 125 g fine sugar
  • 2 eggs
  • 250 g cherries (fresh or drained from jar)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • pinch of salt
  • 2 tbsp apricot jam
  • 1 tbsp water

Method

  1. Preheat oven to 180°C and grease a 22 cm tart tin.
  2. Mix almond flour, all-purpose flour, baking powder and salt in a bowl.
  3. Cream butter and sugar. Add eggs and vanilla extract.
  4. Combine dry ingredients with the butter mixture to make a batter.
  5. Spread batter in tin. Press in cherries like a still life.
  6. Bake 35-40 minutes until golden and done. Let cool.
  7. Warm apricot jam with water and brush the tart for a glossy finish.

Serving notes

  • Serve on a white plate as a piece of art, with a brushstroke of cherry sauce.
  • Garnish with edible gold powder for a touch of 'museum value'.
  • Place three cherries on a small plate as a nod to the three paintings.
