Strike on the Steps Soup

French onion soup with baguette barricade: protest on your plate, sharp and bold.

Spicy French onion soup with baguette slices arranged like a protesting crowd, slanted across the bowl as a barricade. The soup is sharp and tangy, with melted cheese binding the barricade. The bread symbolizes the lines of students on the street, the slanted slices represent the blockade of education.

Ingredients

  • 6 large onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1.2 liters beef stock
  • 100 ml dry white wine
  • 1 baguette
  • 150 g grated Gruyère
  • 2 tbsp white wine vinegar
  • 1 tsp sugar
  • salt and pepper to taste

Method

  1. Cut the onions into thin half rings.
  2. Heat olive oil and butter in a large pot and sauté the onions over low heat until golden brown (20-25 minutes).
  3. Add the finely chopped garlic and cook for 2 more minutes.
  4. Add sugar and white wine vinegar, cook for another 2 minutes.
  5. Deglaze with white wine, let it reduce for 2 minutes.
  6. Add the stock, bring to a boil, and let simmer for 20 minutes.
  7. Season with salt and pepper.
  8. Cut the baguette diagonally into long slices.
  9. Lightly toast the bread slices in the oven.
  10. Divide the soup among bowls. For each bowl, place 3 diagonally cut baguette slices as a slanted barricade across the soup, letting them overlap slightly.
  11. Generously sprinkle with Gruyère and briefly place the bowls under the grill until the cheese is melted.

Serving notes

  • Serve with extra spicy mustard for those who want an even fiercer protest.
  • Garnish with a little fresh thyme for a French touch.
