Striking Baguette March

Diagonally placed baguette slices form a protest march: sharp, sour, and unmistakably French.

A line of diagonally placed, boldly topped baguette slices stand as ‘protesting students’ on the plate. Each ‘figure’ features sharp French cheese, gherkin, and a punch of mustard. The silhouette of a protest march, sharp and sour, nods to the growing French student demonstrations.

Ingredients

  • 1 baguette
  • 150 g strong French cheese (e.g., Comté or Roquefort)
  • 8 gherkins
  • 4 tbsp coarse French mustard
  • 2 red onions
  • 2 tbsp white wine vinegar
  • 2 tbsp olive oil
  • black pepper
  • sea salt

Method

  1. Slice the baguette into 8 equal diagonal pieces.
  2. Cut the French cheese into slices to fit the baguette pieces.
  3. Slice the gherkins lengthwise in half.
  4. Slice the red onions into thin rings. Mix with vinegar, oil, pepper, and salt. Let marinate for 10 minutes.
  5. Top each baguette slice with cheese, half a gherkin, and a teaspoon of mustard.
  6. Arrange the baguette slices diagonally in a row on a long platter to form a march.
  7. Scatter the marinated onion rings over the ‘heads’ of the baguette figures for extra sharpness.

Serving notes

  • Serve on a long platter so the ‘march’ is clearly visible.
  • Offer extra mustard on the side for those who want more kick.
