Stuffed Chip Plate with Double Layer

A scandalously tasty chip from the oven, neat outside, with a spicy secret inside.

An oven-baked filo pastry plate, filled with minced meat, spinach and feta, cut into the silhouette of a computer chip. Neat and shiny on the outside, but with a sharp, spicy filling: the scandal is inside. The dish refers to the Belgian chipmaker espionage case.

Ingredients

  • 8 sheets filo pastry
  • 500 g ground beef
  • 200 g fresh spinach
  • 150 g feta cheese
  • 2 red onions
  • 2 cloves garlic
  • 1 red chili pepper
  • 2 tbsp tomato paste
  • 1 tsp paprika powder
  • 1 tsp cumin powder
  • 50 g unsalted butter (melted)
  • salt and pepper
  • olive oil

Method

  1. Preheat the oven to 200°C.
  2. Finely chop the onions and garlic. Sauté in a large frying pan with olive oil.
  3. Add the ground beef and cook until browned. Add tomato paste, paprika, cumin, salt, and pepper.
  4. Finely chop the chili and add. Add spinach and let it wilt.
  5. Remove from heat and crumble feta into the mixture.
  6. Line a baking tray with parchment. Lay 4 sheets of filo, overlapping, brushing each with melted butter.
  7. Spread the meat mixture evenly over the filo. Cover with the other 4 sheets, brushing each with butter.
  8. Cut a rectangular 'chip' silhouette from the parcel, with small square 'contact points' along the edge (see serving tip).
  9. Bake 20-25 minutes until golden and crisp.
  10. Cool 5 minutes and carefully slide onto a platter. Cut into slices along the 'contact points' and serve.

Serving notes

  • Make small square notches along the edge for chip contact points.
  • Serve on a dark plate for a high-tech effect.
  • Garnish with arugula around the pie for a circuit board feel.
