Stuffed FBI File Rolls

Crispy rolls form an FBI file: sharp, layered, and ready to crack.

Long, crispy filo pastry rolls filled with spicy chicken, arranged side by side as a digital file folder. On the plate, they form the silhouette of a folder with a slanted tab, referencing the hacked FBI file from the news.

Ingredients

  • 8 sheets filo pastry
  • 500 g chicken breast
  • 1 red onion
  • 2 cloves garlic
  • 1 red chili pepper
  • 2 tbsp tomato paste
  • 2 tsp smoked paprika powder
  • 1 lemon (juice and zest)
  • 100 g feta cheese
  • 3 tbsp olive oil
  • salt and pepper
  • 1 egg (beaten, for brushing)

Method

  1. Preheat the oven to 200°C.
  2. Cut the chicken breast into small cubes. Finely chop the onion, garlic, and red chili.
  3. Heat 1 tbsp olive oil in a pan and fry the onion, garlic, and chili for 2 minutes.
  4. Add the chicken and fry until golden. Add tomato paste, paprika, lemon zest and juice. Fry for 3 more minutes.
  5. Crumble in the feta, season with salt and pepper. Let cool.
  6. Place a sheet of filo on a board, brush lightly with olive oil. Place another sheet on top.
  7. Spoon a quarter of the filling at the short end, roll up tightly into a firm roll. Repeat to make 4 rolls.
  8. Arrange the rolls side by side on a baking tray to form a file folder. Place one roll diagonally on top as a 'tab'.
  9. Brush the rolls with beaten egg.
  10. Bake for 20-25 minutes until golden and crispy.
  11. Serve immediately, with extra lemon wedges if desired.
