Stuffed Mailboxes with Tension

Slanted pepper mailboxes packed with tension, tang, and spice—ready for election night.

Four crisp red bell peppers stand slanted like American mailboxes in a row, each filled with spicy rice, tangy tomato, and sharp feta. The setup refers to blocked mail voting: the boxes are ready for ballots, but remain closed. Tang and spice run through the dish.

Ingredients

  • 4 large red bell peppers
  • 200 g brown rice
  • 2 red onions
  • 2 cloves garlic
  • 200 g cherry tomatoes
  • 150 g feta cheese
  • 1 red chili pepper
  • 1 lemon (juice and zest)
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp smoked paprika powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 sprigs fresh parsley

Method

  1. Preheat the oven to 200°C.
  2. Cook the rice according to package instructions.
  3. Cut a small cap off each bell pepper at a slant so they stand slanted, remove seeds. Keep the caps.
  4. Finely chop the onions and garlic. Quarter the cherry tomatoes and slice the chili pepper into thin rings.
  5. Heat 2 tbsp olive oil in a pan. Sauté onion, garlic, and chili for 3 minutes. Add paprika powder and cumin.
  6. Add cooked rice, cherry tomatoes, lemon zest and juice. Stir well and season with vinegar, salt, and pepper.
  7. Crumble the feta and mix into the rice mixture.
  8. Fill the peppers with the mixture and set them slanted in a baking dish. Lean the caps against the openings as 'closed' flaps.
  9. Drizzle with 1 tbsp olive oil. Bake for 25 minutes.
  10. Garnish with fresh parsley. Serve the peppers in a row like mailboxes on a board or platter.

  • Place the caps as closed mailbox flaps against the openings.
  • Serve on a wooden board for the 'mailbox effect'.
